Chili doesn't have to be meatless or made with just beef. Try this version with pulled pork and you will be happy that you did.
16 oz. can chili beans, drained
2 T. olive oil
2 medium onions, chopped
3 cloves garlic, chopped
2 medium green peppers, chopped
2 t. chili powder
1 t. ground cumin
14.5 oz. can diced tomatoes, undrained
2 lb. pulled pork, regular or BBQ, homemade or store bought
3 c. chicken stock
1 t. hot sauce
16 oz. can kidney beans, drained
1 c. sour cream
3 T. fresh cilantro, chopped
1 c. shredded Cheddar cheese or your favorite
Heat oil in a 4 quart saucepan over medium heat. Add onion, garlic, green pepper and dried seasonings; cook 5 minutes, stirring often. Stir in tomatoes and pulled pork; add chicken stock, hot sauce and beans; bring to a simmer. Cook 20-25 minutes.
Serve topped with sour cream, cilantro and cheese. Serve with crackers and/or Fritos.
