This chili is unique with chicken, garbanzo beans, freshly squeezed lemon juice and Feta cheese. It's simple to prepare and can be ready in under and hour.
16 oz. can garbanzo beans, drained
2 T. olive oil
1 medium onion, chopped
4 cloves garlic, chopped
1 medium green pepper, chopped
2 t. dried leaf oregano
16 oz. can diced tomatoes, with juices
freshly squeezed juice of 1 lemon
1 lb. chicken, cooked and shredded
4 c. chicken stock
1/4 c. crumbled Feta cheese
3 T. fresh parsley, finely chopped
Heat oil in a 4 quart saucepan over medium heat. Add onion, garlic, green pepper and oregano; cook 3-4 minutes or until vegetables are soft. Add tomatoes, lemon juice, chicken, stock and beans. Lower heat; simmer 20-25 minutes.
Serve topped with Feta cheese and chopped parsley.
