Lady Bird Johnson was a fantastic cook. She made this wonderful chili for her family and now you can make it for your own, too.
4 lb. chili meat, coarsely ground round steak or well-trimmed chuck (chili-grind)
1 onion, chopped
2 garlic cloves
1 t. ground oregano
1 t. comino seed (or ground cumin)
6 t. chili powder
1 1/2 c. canned, whole tomatoes
2 to 6 generous dashes Liquid hot pepper sauce
2 c. hot water
salt, to taste
Place beef, onion and garlic in a large, heavy pan or Dutch oven. Cook until light in color. Add oregano, comino seed, chili powder, tomatoes, hot pepper sauce, salt and hot water. Bring to a boil; lower heat; simmer for about 1 hour, stirring occasionally.
Skim off and discard fat during cooking.
10-12 servings.
