Whether you make this delicious soup on the stove top or in the slow cooker, it's easy to make and will warm your heart. Serve with a crusty bread to soak up all that wonderful goodness.
2 lb. Italian sausage
5 c. beef stock
1 small chopped onion
14.5 oz. can petite diced tomatoes, with juice
3 oz. tomato paste
3 t. minced garlic
1 1/2 t. black pepper
1 t. salt
2 T. Italian seasoning
16 oz. bag frozen Italian vegetable blend
In a large saucepan, brown the Italian sausage over medium heat. Drain off and discard the fat. Add stock, onion, tomatoes, tomato paste, spices and frozen vegetables. Bring to a boil over medium heat.
When boiling, cover; turn to low; simmer 20-25 minutes or until the veggies are tender.
Serve immediately.
To prepare in slow cooker:
Add the browned sausage and the remaining ingredients to the slow cooker; cook on low 6-7 hours or on high for 3-4 hours or until vegetables are tender. Serve immediately.
