These meatballs have an unexpected ingredient in them, pulled pork! Everyone knows that pulled pork makes everything better, right? They are deliciously sweet and spicy.

Ingredients

2 c. cooked pulled pork, roughly chopped (leftover or packaged from store is quick)
1 1/2 lb. ground beef
1/2 t. kosher salt
1/2 t. freshly ground black pepper
2 c. BBQ sauce, divided (Sweet Baby Ray's Original Barbecue Sauce is a great one)

Preheat oven to 400 degrees. Line 2 baking sheets with aluminum foil.

Combine pork, beef, and 1/2 c. BBQ sauce in a large mixing bowl. Using your hands, mix to evenly mix. Season with salt and pepper, to taste. Scoop and shape into small 1 in. meatballs; place on prepared baking sheets. Set aside 1/2 c. BBQ sauce for serving; refrigerate until needed. Brush each meatball with a generous teaspoon of the remaining sauce. Bake 16 minutes.

Remove from oven; brush with another teaspoon or so of sauce; bake 2 minutes.

Serve with the reserved sauce on the side for dipping, if desired.

Makes 48 one inch meatballs.
