Description

Ingredients

1 1/2 lb. skinless salmon fillet
coarse salt, to taste
freshly ground black pepper, to taste
1 T. unsalted butter
2 t. all-purpose flour
1 c. dry white wine (or lemon juice)
1 T. freshly chopped chives (or fresh parsley)

Preheat oven to 450 degrees.

Place salmon on a rimmed baking sheet; season with salt, to taste.

Roast about 15 minutes, until opaque throughout.

While salmon is roasting, make wine sauce. In a small saucepan, melt butter over medium. Add flour; cook, whisking, 1 minute. Add wine; bring to a boil; reduce to a simmer; cook until liquid is reduced by half, 8 - 10 minutes. Stir in chives; season with salt and pepper, to taste. Gently break salmon into large chunks.

Serve topped with white-wine sauce.
