Buffalo Chicken Chili

Description

This chicken chili just may become your new favorite chili recipe. It's flavorful and zesty with beans, hot sauce, chicken veggies, tomatoes and spices. It's ready in 45 minutes to satisfy your hungry family or guests.

Ingredients

2 T. olive oil
1 large onion, diced
1 rib celery, diced
1 large carrot, peeled and diced
3 cloves garlic, chopped
5 T. chili powder
2 t. ground cumin
1 lb. chicken, cooked and shredded
16 oz. can kidney beans, drained
15.8 oz. can Great Northern beans, drained
2 15 oz. cans tomato sauce
15 oz. can crushed tomatoes, undrained
1/4 c. Louisiana-style hot sauce
4 oz. cream cheese, softened
crumbled blue cheese, optional

Heat oil in a 4 quart saucepan over medium heat; add onion, celery, carrot, garlic and dried spices. Cook 5 minutes, stirring often. Add chicken, beans, tomato sauce and crushed tomatoes. Simmer 20 - 25 minutes. Add hot sauce and softened cream cheese, stirring until smooth.

Serve topped with crumbled blue cheese, if desired.
