Use the grill to make the best chicken wings ever. They are first placed in a wonderful marinade and then grilled. Finally they are dropped in a fantastic Root Beer BBQ Sauce.
50 chicken wings
¼ c. olive oil
½ T. grated ginger
1 T. grated orange zest
freshly squeezed juice from 1 orange
1 T. salt
1 T. freshly ground black pepper
½ t. vanilla extract
Root Beer BBQ Sauce:
1 c. root beer
1 c. ketchup
3 T. Worcestershire sauce
3 T. brown sugar
½ t. onion powder
½ t. garlic powder
1 t. salt
1 t. freshly ground black pepper
freshly squeezed juice from one half lemon
Preheat a charcoal grill for a two zone cooking, having hot coals on one side and nothing on the other.
Mix olive oil, grated ginger, orange zest, orange juice, vanilla extract and 1 T. salt and pepper with the wings; marinate for 30 minutes.
Place wings on the hot grate directly over hot coals; sear for about 3 minutes per side; move to indirect side; cook 20 - 25 minutes at 450°F, because a crispy skin and a golden brown color are wanted.
In a cast iron skillet, mix all of the Root Beer BBQ Sauce ingredients together; simmer 10 minutes; drop the wings inside the skillet and stir to coat each one with BBQ sauce.
Sear one last time over hot coals to caramelize the sauce, 1 - 2 minutes per side.
Serve with orange slices and a cold rich-tasting root beer.
