Everyone will clean their plates when you serve them this classic Italian dish. It's hearty, satisfying and so tasty. It's super simple to make, makes the kitchen smell wonderful and makes for a colorful, beautiful presentation.
2 t. olive oil
2 lb. Italian sausage links, cut into 2-inch pieces
1/4 c. olive oil
4 large potatoes, peeled and thickly sliced
2 large green bell peppers, seeded, membranes removed and cut into wedges
2 large red bell peppers, seeded, membranes removed and cut into wedges
3 large onions, cut into wedges
1/2 c. white wine
1/2 c. chicken stock
1 t. Italian seasoning
salt and pepper, to taste
freshly chopped parsley, for garnish
Preheat oven to 400 degrees.
Heat olive oil in a large skillet over medium heat; cook and stir sausage until browned; transfer to a large baking dish. Pour 1/4 c. olive oil into skillet; cook the potatoes, stirring occasionally, until browned, about 10 minutes.
Place potatoes into baking dish, leaving some oil. Cook and stir bell peppers and onions in hot skillet until they begin to soften, about 5 minutes. Add the vegetables to the baking dish. Pour wine and chicken stock over the vegetables and sausage; sprinkle with Italian seasoning, salt and pepper. Gently stir sausage, potatoes and vegetables together.
Bake until hot and bubbly, 20 - 25 minutes.
Garnish with chopped parsley. Serve hot.
