Make an easy dinner in your slow cooker that will be a huge hit. This pork is versatile-serve it on sliders with chips and a dill pickles or over cooked rice and maybe some beans.
2 1/2 -3 lb. pork roast
1 c. honey
1/2 c. soy sauce
2 T. Worcestershire sauce
2 T. freshly squeezed lime juice
2 garlic cloves, minced
1 t. ground ginger
4 T. cornstarch
In a bowl, whisk together honey, soy sauce, Worcestershire sauce, lime juice, garlic and ginger.
Put a slow cooker liner in the crock of the slow cooker for easy clean up. Place pork roast into slow cooker; pour mixture over top. Cook on High for about 5 hours, or on Low 8-10 hours.
When finished cooking, remove pork from slow cooker to a platter or a cutting board. Pour marinade from the slow cooker into a medium saucepan. Place marinade on medium heat, slowly stirring in cornstarch. Simmer for about 4 minutes, or until sauce begins to thicken.
While sauce is cooking, shred pork; return shredded pork to the slow cooker. Pour sauce over top coating all the pork; stir.
Serve over cooked rice or on sliders.
