Make a tasty Mexican inspired meal with ground beef, vegetables, taco seasoning and Mexican cheese. It's a hearty meal that you can put together quickly on a busy week night.
1 lb. lean ground beef
1 1/2 c. Mexican Style Shredded Four Cheese with a TOUCH OF PHILADELPHIA, divided (Kraft brand)
1 oz. pkg. taco seasoning mix
1 c. long-grain white rice, raw
1 c. frozen mixed vegetables (carrots, corn, peas)
14.5 oz. can no-salt-added diced tomatoes, undrained
1 c. Thick and Chunky Medium Salsa
1 c. fat-free reduced-sodium chicken stock/broth
Preheat oven to 375 degrees. Spray a 13 x 9 inch baking dish with non-stick cooking spray.
Brown ground beef in a large non-stick skillet; drain and discard grease. Set aside 1 c. cheese for later use. Add remaining cheese and all remaining ingredients to meat in skillet; mix well.
Spoon into prepared baking dish; cover.
Bake 40 - 50 minutes or until rice is tender. Top with reserved cheese; bake, uncovered, 5 minutes or until melted.
Serve hot.
