Whether you make these Greek Meatballs with ground lamb or beef, you will receive high praises for them. They're simple and quick to make and are served with a wonderful, creamy Avocado Tzatziki sauce that everyone will love.
Greek Meatballs:
1 lb. ground lamb or beef
½ medium red onion, finely diced (about ½ cup)
2 cloves garlic, minced
zest of ½ lemon
1 T. fresh oregano, chopped or 1 t. dried oregano
1 t. ground coriander
½ t. ground cumin
sea salt, to taste
black pepper, to taste
Avocado Tzatziki:
1 avocado, peeled and pit removed
1 small-medium cucumber or ½ large cucumber, cut in half and seeds scraped out with a spoon
2 cloves garlic, minced
1 T. red onion, diced
freshly squeezed juice of 1 lemon
1 T. fresh dill or mint, depending on your preference
¼ c. sour cream or Greek yogurt
sea salt, to taste
black pepper, to taste
Preheat oven to 350 degrees.
Combine all the meatball ingredients together; form into approximately 1 1/2 to 2 inch balls.Place on a rimmed baking pan/sheet; bake 25 minutes.
Avocado Tzatziki Sauce:
Combine all avocado tzatziki sauce ingredients together in a food processor or a blender; blend until smooth and creamy.
Serve with avocado avocado tzatziki sauce.
Makes 25-30 meatballs.
**Adding ¼ c. feta cheese to the meatballs and/or the Avocado Tzatziki Sauce makes them even better.
