Ingredients

Yogurt sauce:
7 oz. plain Greek yogurt
¼ t. minced garlic
¼ t. dried dill
freshly squeezed juice from half of 1 medium lemon
dash of salt

2 oz. frozen spinach, thawed
6 halves sun-dried tomatoes
1 medium red onion, chopped
1 1/4 lb. ground turkey

¼ c. crumbled feta
½ t. minced garlic
1 t. dried oregano
1 large egg
⅓ c. breadcrumbs
1/2 t. salt
freshly ground black pepper, to taste

1 medium cucumber
6 low-carb hamburger buns

Yogurt sauce:
Combine yogurt, garlic, dill, lemon juice and salt; stir to combine; refrigerate to allow the flavors to blend while making the burgers.

Thaw frozen spinach; squeeze out as much moisture as possible. Roughly chop spinach to prevent long strings. Chop sun-dried tomatoes and ¼ of the red onion.

In a bowl, combine ground turkey with the spinach, sun-dried tomatoes, red onion, feta, garlic, oregano, egg, breadcrumbs, salt and freshly ground pepper. Stir until combined. Shape mixture into 6 patties.

Cook burgers on a preheated countertop grill, a non-stick skillet or over open flame.

Spread yogurt sauce on both sides of the buns, add warm burgers and top with thin slices of red onion and cucumber.

6 servings.
