This is a very easy weeknight dinner to make, especially if using leftover mashed potatoes or mashed potatoes from the refrigerated section of the grocery store. Serve with warm rolls and a salad.
1 lb. lean ground beef
1- 1 1/2 T. butter
1- 1 1/2 c. chopped or grated onion
1 1/4 oz. packet taco seasoning mix, or more to taste
1 1⁄2 c. frozen corn
3 c. mashed potatoes, prepared using your favorite recipe and ingredients
1⁄2 c. grated cheese, your favorite
salt and pepper, to taste
Preheat oven to 350 degrees.
Cook potatoes in well salted boiling water until tender, about 20 minutes. Drain potatoes; mash using your favorite recipe.
Heat butter in saute pan; add onion; saute 5 minutes. Add ground beef; cook until beef is lightly browned; discard excess fat. Add taco seasoning mix; cook according to package directions. Remove from heat.
Place meat mixture into an ovenproof casserole. Layer with corn. Add mashed potatoes, spreading out in an even layer. Sprinkle with grated cheese. Salt and pepper, to taste.
Bake 30 minutes, or until potatoes are light golden.
Serve.
4-5 servings.
