Description
This is a very easy weeknight dinner to make, especially if using leftover mashed potatoes or mashed potatoes from the refrigerated section of the grocery store. Serve with warm rolls and a salad.
Ingredients
- 1 lb. lean ground beef
- 1- 1 1/2 T. butter
- 1- 1 1/2 c. chopped or grated onion
- 1 1/4 oz. packet taco seasoning mix, or more to taste
- 1 1⁄2 c. frozen corn
- 3 c. mashed potatoes, prepared using your favorite recipe and ingredients
- 1⁄2 c. grated cheese, your favorite
- salt and pepper, to taste
Steps
- Preheat oven to 350 degrees.
- Cook potatoes in well salted boiling water until tender, about 20 minutes. Drain potatoes; mash using your favorite recipe.
- Heat butter in saute pan; add onion; saute 5 minutes. Add ground beef; cook until beef is lightly browned; discard excess fat. Add taco seasoning mix; cook according to package directions. Remove from heat.
