One Sheet Pan Meatloaf Dinner

Description

Although this is not a quick dinner to make, it's definitely an easy one to prepare. It's so impressive with mini-meatloaves, roasted green beans and mashed potatoes all prepared on a sheet pan.

Ingredients

non-stick cooking spray

Mashed Potatoes:
1 1/2 lb. russet potatoes, peeled and chopped into small pieces
generous pinch of Kosher salt
generous pinch of freshly ground black pepper
1/3 c. water

1 T. unsalted butter
2/3 c. milk, whole, 1% or 2%
salt and pepper, to taste

1 packet gravy mix plus water, optional

Mini-Meatloaves:
1 large egg, lightly beaten
1 c. grated yellow onion (1 large or 2 medium)
1 t. Italian seasoning
1 T. tomato paste
1/4 c. Panko
1 1/2 T. Worcestershire sauce
2 T. milk, whole 1% or 2%
1 t. salt
1/2 t. pepper
3 T. Italian flat-leaf parsley, finely chopped

1 1/4 lb. lean ground beef
1/3 c. ketchup

Roasted Green Beans:
1 lb. fresh green beans, ends trimmed
1 1/2 T. olive oil
1/2 t. salt
1/4 t. pepper

Preheat oven to 425 degrees.

Place a large sheet of aluminum foil on a large 13 x 18 sheet pan. (NOT HEAVY DUTY FOIL AND NOT MORE THAN ONE PIECE OF FOIL OR POTATOES WON'T COOK PROPERLY.) Spray the sheet pan and foil generously with non-stick cooking spray.

Potatoes:
Place the peeled/chopped potatoes along with a generous pinch of salt and pepper in the center of the foil. Fold foil up around potatoes; add in the water; seal the potatoes into a packet; place in the oven for 10 minutes. Meanwhile, prepare the mini-meatloaves.

Mini-Meatloaves:
In a large bowl, add in the egg; lightly beat with a fork. Using a grater, grate onion (grating prevents getting a bite of raw onion); add to the bowl along with Italian seasoning, tomato paste, Panko, Worcestershire sauce, milk, 1 t. salt, 1/2 t. pepper and chopped parsley; whisk; add in ground beef.

Mix ingredients together, being careful not to over-mix or mash the meat which will create a denser meatloaf. Handling as little as possible, form 6 mini-meatloaves. Add these to the tray with the potatoes; spread ketchup evenly among the top of each meatloaf.

Bake 20-25 minutes.

Remove from oven, soak up some of the grease with a napkin, and add the trimmed green beans in the last section of the sheet pan. Drizzle with olive oil and about 1/2 t. salt and 1/4 t. pepper. Toss; bake 15-20 minutes or until beans are roasted and the meatloaf is cooked to an internal temperature of 160 degrees F.

Remove from the oven; carefully open the foil pack of potatoes. Transfer potatoes to a large mixing bowl; add in the butter, milk, salt and pepper to taste. Mash the potatoes until smooth.

If desired, prepare the gravy packet according to package directions to serve with the potatoes.

Serve immediately.
