Ingredients

3-4 lb. center cut pork loin
2 Granny Smith apples, sliced and divided
1 white onion, sliced
½ c. butter, sliced into pats
¼ t. salt
¼ t. black pepper
½ t. ground cinnamon
¼ c. honey
½ t. dried thyme or a few sprigs of fresh thyme

Place pork loin on a cutting board; cut slits on the top of the pork loin about an inch down. Place apple slices into the slits; set aside.

Place a slow cooker liner in a 6 quart slow cooker for easy clean up.

Distribute onions and remaining apple slices down in the slow cooker; lay over the slices of butter (for more flavor). Add the pork loin; sprinkle pork with salt, pepper and cinnamon; add thyme; drizzle on the honey.

Cover; cook on Low for 6 hours without lifting the lid during the cooking time.

When the cooking time is over, remove the pork onto a platter; allow to rest for at least 5 minutes before slicing.

Serve.

8 servings.

**If the pork is cooked any longer, it would turn into shredded meat.
