Description
Make a quick, easy potato side dish with Southwest flavors. Just cut up baking potatoes, bell peppers, red onion, season with a wonderful Southwest spice blend and a little oil and bake for about 40 minutes.
Ingredients
- 2 large baking potatoes, cut into 1/2 inch cubes
- 1 red bell pepper, sliced, membranes discarded
- 1 green bell pepper, sliced, membranes discarded
- ½ red onion, sliced
- 2 T. vegetable oil
- ½ t. chili powder
- ½ t. paprika
- ½ t. cumin
- 1 t. oregano
- 1 t. garlic powder
- 1 t. salt, or to taste
Steps
- Preheat oven to 425 degrees. Line a large 17 z 11 x 1 inch rimmed baking sheet with aluminum foil.
- Wash and cut potatoes into cubes; place in a large mixing bowl.
- Cut bell peppers and onion into pieces that are about the same size as potatoes; add to the mixing bowl.
