Make a quick, easy potato side dish with Southwest flavors. Just cut up baking potatoes, bell peppers, red onion, season with a wonderful Southwest spice blend and a little oil and bake for about 40 minutes.
2 large baking potatoes, cut into 1/2 inch cubes
1 red bell pepper, sliced, membranes discarded
1 green bell pepper, sliced, membranes discarded
½ red onion, sliced
2 T. vegetable oil
½ t. chili powder
½ t. paprika
½ t. cumin
1 t. oregano
1 t. garlic powder
1 t. salt, or to taste
Preheat oven to 425 degrees. Line a large 17 z 11 x 1 inch rimmed baking sheet with aluminum foil.
Wash and cut potatoes into cubes; place in a large mixing bowl.
Cut bell peppers and onion into pieces that are about the same size as potatoes; add to the mixing bowl.
Add all spices into the bowl with potatoes and vegetables; mix well.Add oil; mix well.
Evenly spread out potato and vegetables in the prepared baking sheet. Bake 35-40 minutes.
