This refreshingly delicious citrus filled shrimp is quick and simple to prepare. It's good for when company comes or just to enjoy at home with family.
1 T. olive oil
1 c. freshly squeezed orange juice
1/2 c. freshly squeezed lemon juice
3 garlic cloves, minced
1 T. finely chopped parsley, divided
1/2 t. freshly ground black pepper
3 lb. medium shrimp
1 medium orange, cut into wedges
1 medium lemon, cut into wedges
In a medium bowl, whisk together the olive oil, orange and lemon juices, garlic, onion, 2 t. parsley and black pepper. Pour this mixture into a large skillet set over medium heat; bring to a simmer; cook until reduced by half, 5 - 8 minutes. Add shrimp; cover; cook until shrimp turn pink, about 5 minutes.
Top with the remaining parsley. Serve with orange and lemon wedges on the side.
