These pork chops are made in the oven so are a healthier way to prepare them than frying. They have incredible flavor and a simple to make. Serve with your favorite sides.
4 boneless pork chops (boneless pork loin chops, usually around 1/2 inch thick)
2 large eggs
1 t. onion powder
1 t. garlic powder
1 t. cumin
1 c. Panko bread crumbs
1/2 c. Italian seasoned bread crumbs
1 c. freshly grated or shredded Parmesan cheese
non-stick cooking spray, olive oil type preferred
freshly ground black pepper
salt
1 T. finely chopped parsley
Preheat oven to 400 degrees.
In a medium bowl, whisk 2 eggs; add garlic and onion powders, cumin, and parsley; mix well; set aside.
In a shallow bowl, plate or platter, mix Italian seasoned bread crumbs with Panko bread crumbs; set aside.
In a third shallow bowl, plate or platter, add Parmesan cheese; set aside.
Spray both sides of chops with cooking spray; season both sides with salt and pepper.
Coat chops completely with Parmesan cheese, making sure cheese adheres on both sides.
Dip chops into the egg/seasoning mixture; coat completely with the bread and Panko crumbs, making sure that both sides are covered completely.
Place aluminum foil on a baking sheet or in a baking dish; lightly spray on non-stick cooking spray to coat foil.
Place chops on the baking sheet or dish; bake for 15 minutes.
Flip chops over gently; bake for an additional 15-30 minutes until golden brown and centers reach 150 degrees.
Serve.
