Even your pickiest eaters will enjoy this healthy dish. It's a low carb meal that is packed with protein and yummy vegetables. It's quick and easy to prepare in just one skillet.
2 green, yellow or orange bell peppers, thinly sliced
2 red bell peppers, thinly sliced
non-stick cooking spray
1 yellow onion, thinly sliced
2 garlic cloves, minced
2 lean chicken or turkey sausage links
herbs, your choice
black pepper, to taste
Coat a skillet with non-stick cooking spray; heat over medium heat. Add peppers and onion; sauté 7 - 9 minutes until soft and lightly browned; add minced garlic; saute 1 minute; set aside.
Spray skillet again with non-stick cooking spray; sauté sausages over medium heat until almost fully cooked. Slice into ¼-inch rounds; sauté; add cooked vegetables; sauté 1 - 2 minutes over medium heat. Add in preferred herbs and black pepper.
Serve with your favorite sides or on a sub roll and as a sandwich.
