Description
This one pot meal is quick and easy to prepare because it starts with packaged store bought ingredients. Best of all, it is so good, your family and friends will never suspect that it isn't totally homemade.
Ingredients
12 oz. flavored chicken sausage links, cut into 1/4 inch thick slices
1 t. olive oil
15 oz. package frozen vegetable gumbo blend
14.5 oz. can diced tomatoes with Italian herbs, undrained
2 c. water
8 oz. package red beans and rice mix
10 oz. package frozen Cajun-marinated shrimp

Preheat large, non-stick stockpot on medium for 1–2 minutes.
Place oil in stockpot; add sausage; cook 2–3 minutes or until hot and sizzling. Stir in remaining ingredients, except for the shrimp; cover; bring to a simmer, cook 20 minutes.
Stir shrimp into rice; cover; simmer 6–8 minutes, until shrimp are pink and opaque.
Serve.
