Casseroles are a big hit in busy homes because they are prepared quickly and usually are made in one baking dish, so clean up is easy. This one is very tasty and hearty and will be a hit with everyone at your house.
6 oz. spaghetti, broken into 3 pieces
1 c. cooked chicken, shredded or diced
1 egg, beaten
1 c. sour cream (8 oz.)
1/4 - ½ t. garlic powder
2 c. grated or shredded Monterey Jack cheese (8 oz.)
10 oz. frozen spinach, thawed and drained well
2.8 oz. can french fried onions, divided
Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray.
Bring a large pot of well salted water to a boil; cook spaghetti al dente according to package instructions; drain; add to a large bowl.
Add chicken, beaten egg, sour cream, garlic powder, cheese, spinach, and half of the onions to the bowl; stir well to combine.
Pour into prepared baking dish; top with the remaining onions. Cover tightly with aluminum foil; bake 20 minutes.
Remove foil; bake 5 minutes.
Serve immediately.
