Surprise friends and family with an innovative and unexpected burger. This summer, serve them a peanut butter burger with strawberry relish. Yes, that's right. The combo is so fabulous you will decide that you need this burger in your life from now on.
Strawberry Relish:
1 T. olive oil
1/2 red onion, sliced thinly
2 c. sliced strawberries
3 T. balsamic vinegar
3 T. red wine
2 T. brown sugar
Burger:
4 brioche or hamburger buns
4 hamburger patties
8 bacon slices, cooked
1 c. creamy peanut butter, at room temperature
4 Fontina cheese slices
Heat the olive oil and sliced onions in a skillet until softened. Add the remaining relish ingredients to the skillet; cook over a low heat for 50 minutes until the mixture becomes sticky and thick.
While relish is reducing, cook the bacon until slightly crispy.
About 10 minutes before the relish is done, heat the grill to high; cook the burgers, about 3 minutes on each side or longer for well done.
Slice the buns in half horizontally; spread the bottom halves with the peanut butter. Place the burgers on the tops; top with the cheese slices.
Spoon relish on the tops of the cheese; place 2 slices of bacon on each, followed by the top parts of the buns.
