This meal is awesome and easy to make. Your friends and family will thank you for it. Serve with a crusty, toasted bread, if desired.
4 bell peppers, rinsed, halved, seeds and membranes discarded, your favorite colors
oil, for frying
1 1/2 lb. sirloin steak, thinly sliced
1 large onion, sliced
16 oz. Crimini mushrooms
kosher salt, to taste
freshly ground black pepper, to taste
16 slices Provolone cheese
Preheat oven to 325 degrees. Spray a large baking dish with non-stick cooking spray.
Place peppers in prepared baking dish; bake until tender, about 20 minutes.
Meanwhile, in a large skillet over medium-high heat, heat oil; add steak; cook about 1 minute per side; remove steak to a plate; set aside. Add onions and mushrooms; season with salt and pepper, to taste. Return steak to skillet; stir to combine.
Set oven to broil.
Place Provolone cheese to bottom of peppers; top with steak, onions and mushrooms. Top with remaining Provolone cheese; broil, 3 minutes.
Serve hot.
4-8 servings.
*Substitute thinly sliced deli roast beef for the sirloin steak, if desired.
