Cooking is easy and clean up a snap with this one pot pasta dinner. You will be surprised at how delicious and full of flavor this dish is.
8 oz. dry small pasta, like penne or small bow tie
2 T. olive oil
1 lb. kielbasa sausage, sliced (your favorite)
1 onion, diced
3 garlic cloves, minced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 zucchini, diced
1 pint cherry tomatoes, cut in half
14 oz. can diced tomatoes, with juice
4 c. chicken stock
2 T. Cajun seasoning blend
1/2 c. heavy cream
1 c. shredded Cheddar cheese
1/2 c. grated Parmesan cheese
1/4 c. fresh basil, chopped, optional
1/4 c. fresh parsley, chopped, optional
1/4 c. fresh green onion, chopped, optional
Pour olive oil in a large pot; cook the smoked kielbasa and onions, about 2 - 3 minutes; drain off excess fat and discard. Add the pasta, garlic, bell peppers, zucchini, cherry tomatoes, diced tomatoes, chicken stock, and Cajun seasoning.
Cook over medium heat; cover; bring to a boil. Lower heat; uncover; simmer until pasta has cooked through and most of the liquid has been absorbed, about 20 - 25 minutes, stirring often so that nothing sticks to the bottom.
Stir in the heavy cream, Cheddar and Parmesan cheeses; cook until melted through and sauce has thickened. Garnish with green onion, basil or parsley.
Serve immediately.
