Add this yummy dish to your one pot meal recipe collection. It's super easy to make, but best of all, the whole family will love the tender chicken and light, fluffy rice.
4 boneless skinless chicken breast halves or boneless chicken thighs
salt and pepper, to taste
1 t. garlic powder
1 t. dried parsley
2 T. butter
1 c. uncooked white rice, like Jasmine rice
2 1/4 c. chicken stock
1 t. lemon zest
3 T. lemon juice from 1 lemon
1 t. dried parsley
1 whole lemon, cut into slices, for garnish
Heat a large skillet that is at least 2 inches deep over medium-high heat.
Season chicken with salt, pepper, garlic powder and parsley.
Add butter to the skillet; cook chicken in hot butter until browned, but not cooked all the way through, about 2 minutes per side. Remove chicken to a plate or platter.
Add rice, chicken stock, lemon zest, lemon juice and parsley to the skillet over medium heat; use a wooden spoon to scrape the browned bits from the skillet. Let rice come to a small boil; reduce heat to a simmer.
Place the chicken on top of the rice mixture; cover; cook 20 - 25 minutes or until rice is tender and liquid is absorbed.
Garnish chicken with lemon slices and parsley, if desired. Serve.
