Making guacamole dates back to the time of the Aztecs. The recipe is basically the same, probably because the original was just so good. The fruit has a very low fat content and is good for you. But guacamole is popular because it just tastes so good.
2 ripe Hass avocados
1 Serrano chile, chopped
1 medium sweet onion, chopped
¼ c. chopped cilantro
1 clove garlic
½ tea Kosher salt
freshly squeezed juice of ½ lime
½ diced fresh tomato, optional
Muddle the garlic, cilantro and avocados together, leaving it chunky. Season with salt. Add lime juice, chopped onion and chile; muddle again. Stir in fresh tomato, if using.
