Do you love tuna melts but not the bread that is required to make them? Try this delicious, healthier option of the classic tuna melt instead.
2 cans solid white albacore tuna, drained
4 large tomatoes
2 avocados
1 c. shredded Cheddar cheese
salt and pepper, to taste
freshly chopped parsley, for garnish, optional
Preheat oven to 400 degrees.
Cut tops off tomatoes, discard; scoop out the centers; reserve. Place tomatoes in a baking dish.
In a large bowl, combine tuna, avocado, Cheddar cheese, salt and pepper; mix until combined.
Fill tomatoes with tuna mixture; top with more tuna and Cheddar cheese.
Bake 7 minutes, or until cheese has melted.
Remove from oven. Garnish with chopped parsley and reserved tomato centers, if desired. Serve.
