Easy Aluminum Foil Sausage and Veggie Dinner

Description

Aluminum foil dinner packets make cooking so easy and clean up is a snap. They're great for camping or those times when you don't want to heat up the kitchen by turning on the oven. But the best thing about them is that they are delicious.

Ingredients

1 red bell pepper
2 ears of corn
1/2 large yellow onion or 1 medium
4-5 small red potatoes
1 medium sized zucchini
13 oz. package Butterball Hardwood Smoked Turkey Sausage, kielbasa, or vegetarian sausages

5 T. olive oil
1 T. dried oregano
1 T. dried parsley flakes
1/2 t. garlic powder
1 t. paprika
1/2 t. seasoned salt, or to taste
black pepper
chopped parsley, optional

Cut the top off the bell pepper and discard; remove and discard the seeds and membrane; slice pepper thinly.

Remove and discard husks from corn; cut corn into 1 inch disks. Coarsely chop the onion. Cut the potatoes into small bite-sized pieces, about 8-10 pieces per potato depending on size. Cut the zucchini into coins.
Cut the turkey sausage into coins.

Preheat the grill to medium heat.

Assembly:
In a small bowl, stir together the olive oil, oregano, parsley, garlic powder, paprika, about 1/2 t. seasoned salt and pepper; stir.

Add seasoning mixture to the veggies and meat; toss well.

For each serving, place 2 pieces of aluminum foil on top of each other. Put a generous amount of the mixture in the center; fold up the first piece of foil and then the next piece of foil to form a secure encasing.

Grill packets covered over medium heat for 16-24 minutes, depending on heat of grill, until veggies are crisp tender. Remove and top with freshly chopped parsley, if desired.

4-6 servings.

Oven cooking: 400 degrees for around 30-35 minutes.
