Description
Serve each member of your family their own baked potato half with sausage and and egg. Season the mixture to your desired taste for more flavor, if desired.
Ingredients
- 2 large baking potatoes
- 2 T. butter
- 1/4 c. grated Parmesan cheese
- 2 pre-cooked sausages, diced or crumbled bacon
- 4 large eggs
- salt and pepper, to taste
Steps
- Preheat oven to 425 degrees.
- Scrub the potatoes; pierce each with a fork. Bake until fork-tender, 45 minutes to 1 hour.
- Carefully cut each potato in half; scoop out the insides; Season potato halves and scooped out potatoe with salt and pepper; stir in the butter and cheese into the mixture; fold in the sausages. Spoon the potato mixture back into the 4 potato halves, creating a hollow in each center. Add 1 broken egg into each hollow.
