Serve each member of your family their own baked potato half with sausage and and egg. Season the mixture to your desired taste for more flavor, if desired.
2 large baking potatoes
2 T. butter
1/4 c. grated Parmesan cheese
2 pre-cooked sausages, diced or crumbled bacon
4 large eggs
salt and pepper, to taste
Preheat oven to 425 degrees.
Scrub the potatoes; pierce each with a fork. Bake until fork-tender, 45 minutes to 1 hour.
Carefully cut each potato in half; scoop out the insides; Season potato halves and scooped out potatoe with salt and pepper; stir in the butter and cheese into the mixture; fold in the sausages. Spoon the potato mixture back into the 4 potato halves, creating a hollow in each center. Add 1 broken egg into each hollow.
Arrange on a baking sheet; cook 10 - 15 minutes or until set.
Season with salt and pepper.
4 servings.
*Optional: For more taste: scoop the potato out, added cream cheese, sour cream, and chives to the butter; beat with an electric beater; added Monterey Jack cheese. Put the potato mixture back in the skin; add browned breakfast sausage; add egg. Bake.
