Tuna salad has never been better. Instead of mayonnaise make it with ripe, mashed avocado, celery, red onion, a little olive oil, and freshly squeezed lemon juice. Serve it on your favorite bread or toast.
5 oz. can tuna, packed in olive oil, drained
1/2 ripe avocado, peeled and roughly chopped
1/2 c. minced or copped celery
1/4 c. minced or chopped red onion
1 T. olive oil
2 t. freshly squeezed lemon or lime juice
1 t. lemon or lime zest
2 T. freshly chopped cilantro or parsley
1/2 t. kosher salt
freshly ground black pepper
4 pieces bread or toast
Place all ingredients in a medium bowl; mix with a fork; mash the avocado; break up the chunks of tuna; mix until all ingredients are well combined. Add more oil and season with salt and pepper, as necessary.
Serve on your favorite bread or toast.
2 sandwiches.
This salad could also be served in the avocado peelings, if desired.
