Serve these flavorful and healthy lettuce cups when you are wanting to cut back on carbs. They make a great appetizer, light lunch or even dinner. If you would like to make them even healthier, swap out the ground beef with ground turkey, chicken or even
1 T. sesame oil
1 lb. ground beef
2 garlic cloves, minced
1 t. freshly minced ginger
1 red bell pepper, finely chopped
2 green onions, finely chopped and divided
1 can sliced water chestnuts, drained and finely chopped
1/4 c. hoisin sauce
1 T. soy sauce
large Bibb lettuce or iceberg lettuce leaves
Sriracha, optional
chopped peanuts or cashews, optional
Heat oil in a large skillet over medium heat; add garlic and ginger; sauté 1 minute or so until fragrant. Add red bell pepper, water chestnuts and half of the green onions; sauté for a few minutes. Remove from pan; set aside.
In the same skillet, add ground beef; cook, stirring, until no longer pink, about 5 minutes. Add veggie mixture back to the skillet; add the hoisin and soy sauces; cook for 1- 2 minutes until everything is combined.
Scoop the beef mixture into lettuce cups; sprinkle with remaining green onion, hot sauce and chopped peanuts.
