Marinade:
1 c. yogurt
1 T. freshly squeezed lemon juice
2 t. freshly ground cumin
1 t. ground cinnamon
2 t. cayenne pepper
2 t. freshly ground black pepper
1 T. minced fresh ginger
1 t. salt, or to taste
3 boneless skinless chicken breasts, cut into bite-size pieces
1 T. butter
1 clove garlic, minced
1 jalapeno pepper, finely chopped
2 t. ground cumin
2 t. paprika
1 t. salt, or to taste
8 oz. can tomato sauce
1 c. heavy cream
1/4 c. freshly chopped cilantro
Marinade:
In a large bowl, combine yogurt, lemon juice, cumin, cinnamon, cayenne, black pepper, ginger, and salt. Stir in chicken, cover; refrigerate 1 hour.
When ready to cook, preheat grill on high heat. Lightly oil the grill grate.
Thread chicken onto 4 long skewers; discard marinade. Grill chicken until juices run clear, about 5 minutes per side.
Melt butter in a large heavy skillet over medium heat; saute garlic and jalapeno for 1 minute. Season with cumin, paprika and salt. Stir in tomato sauce and heavy cream. Simmer on low heat until sauce thickens, about 20 minutes. Add grilled chicken; simmer 10 minutes.
Transfer to a serving platter. Garnish with fresh chopped cilantro.
