This will become your favorite way to cook many types of fish because it is so easy, requires just a few ingredients and is so quick to do. It's delicious, refreshing, light and healthy too.
4 six oz. halibut filets
3 T. freshly squeezed lemon juice
2 T. extra virgin olive oil, plus more for drizzling
salt and pepper, to taste
freshly chopped chives, for garnish
lemon wedges, for serving
Preheat oven to 400 degrees.
In a small bowl, whisk together lemon juice and olive oil.
Place halibut filets skin-side down in a baking dish; drizzle with the lemon juice and olive oil mixture; season with salt and pepper, to taste.
Bake 12-15 minutes, until fish flakes easily with a fork.
Drizzle fish with a little olive oil and garnish with chopped chives.
Serve with lemon wedges.
