If you are looking for a low-carb meal, try this. It has only 2 net carbs per serving. Old and young alike will love this amazingly delicious and filling dish.
1/2 lb. bacon
1 lb. lean ground beef
1/2 sweet onion
1 clove garlic
4 T. cream cheese
2 T. reduced sugar ketchup
1 T. yellow mustard
1 T. Worcestershire sauce
1 t. seasoned salt
4 large eggs
1/4 c. heavy cream
1 t. ground pepper
1 t. hot sauce
8 oz. grated cheddar cheese
1 t. fresh dill
Preheat oven to 350 degrees. Grease an 8 x 8 inch baking dish.
Cut bacon into small pieces; cook in a large skillet over medium heat; stirring often, until crisp. Remove bacon from pan onto a paper towel lined plate; set aside. Drain grease from pan.
Add ground beef to the skillet; cook until browned, crumbling as it cooks; drain off fat.
Add onion and garlic to the beef; cook until translucent, about 5 minutes. Add cream cheese, ketchup, mustard, Worcestershire sauce and seasoned salt; cook over low heat, stirring constantly, until combined.
Spread the beef mixture into the prepared baking dish; top with cooked bacon.
Crack eggs into a medium bowl; whisk together with the heavy cream until combined; stir in the pepper and hot sauce. Pour egg mixture over the meat. Top with the cheddar cheese.
Bake 30 minutes or until set and golden on top. Sprinkle with fresh dill right before serving.
