In a large mixing bowl, combine ground beef, egg, tomato paste, mustard, Worcestershire sauce, garlic powder, breadcrumbs, salt and pepper. Mix well to combine. Shape meat mixture into 4 oval-shaped patties.
Heat a large skillet over medium heat for about 1 minute; add butter. Place meat patties in the skillet; cook for about 4 - 5 minutes per side, or until well-browned. Remove patties from skillet; set aside.
Gravy:
Add onions to the skillet; reduce heat to medium-low. Cook onions until translucent and caramelized, about 15 - 20 minutes. Sprinkle 2 - 3 T. flour over caramelized onions; stir to coat. (Use 2 T. flour to make gravy on the thinner side, or 3 T. flour for a thicker gravy). Cook flour-coated onions for 1 minute, until flour starts to smell toasty. Add dried thyme; cook until fragrant, about 30 seconds. Gradually stir in beef stock/broth and soy sauce; raise heat back to medium.
Add seared patties back to the skillet; bring to a gentle simmer; cover; cook patties 10 - 15 minutes, or until cooked through. Season gravy to taste. (Gravy will thicken as it cools). Remove the Salisbury steaks from the heat.
Serve warm.
