Make healthy salmon and serve it for a special dinner. It's easy to make, has a wonderful taste and makes an elegant entree and a stunning presentation.
2 salmon fillets (5–6 oz. each)
1 T. fresh basil, finely chopped
2 t. fresh thyme, finely chopped, divided
2 t. chipotle roasted garlic seasoning, divided
3 t. extra-virgin olive oil, divided
1 c. fresh cherries, pitted
1 t. minced garlic
1 t. red wine vinegar
2 t. sugar
Preheat grill. (Can be an outside grill or stove top grill pan.)
Place salmon in a large zip-top bag.
Chop herbs finely; in a small bowl, combine basil, thyme, 1 t. chipotle seasoning and 2 t. oil. Place herb mixture in bag with salmon; seal bag; knead lightly to coat fillets.
Pit cherries; chop roughly.
Preheat small saucepan on medium heat 1 – 2 minutes. Place garlic and remaining 1 t. oil in pan; cook 1–2 minutes or until fragrant; stir in cherries, vinegar, sugar, remaining 1 t. seasoning and 1 t. thyme; cook relish 3–4 minutes or until thickened.
Place salmon on grill; cook 3–4 minutes on each side and until they reach 145 degrees.
Serve salmon topped with relish.
