Make this chicken that's stuffed with pepper jack cheese, bell peppers, mushrooms and onions and seasoned on top with Cajun seasoning. What's great is that each chicken breast can be seasoned with as much or as little seasoning as desired to suit each per
4 large chicken breasts
1 T. olive oil
4 large white or cremini mushrooms, sliced
½ red bell pepper, diced
½ green bell pepper, diced
¼ white onion, diced
½ c. shredded pepper jack cheese
4 t. cajun seasoning* (use ingredients below or use store bought)
4 T. butter, divided
Cajun seasoning:
1 t. onion powder
1 t. garlic powder
1 t. oregano
1 t. basil
1/2 t. thyme
1/2 t. black pepper
1/2 t. white pepper (if you don’t have it, just substitute black pepper)
1/2 t. cayenne pepper
2 1/4 t. paprika
1 1/4 t. salt
Preheat oven to 400 degrees. Lightly grease a 9 x 13 pan.
Pound out the chicken breasts until about ¼-inch thick.
Heat olive oil in a heavy skillet over medium-high heat; saute mushrooms, bell peppers and onion for about 5 minutes.
Place a bit of cheese in the center of each chicken breast; place a large spoonful of mushroom/bell pepper/onion mixture on top; place on another bit of cheese.
Roll up the chicken so stuffing stays completely inside; secure chicken with wooden toothpicks; place in the prepared pan. Season generously with 4 T. cajun seasoning. Place 1 T. butter on top of each chicken breast.
Bake until chicken is cooked through, to an internal temperature of 165 degrees, about 40 -55 minutes.
Remove toothpicks before serving.
Serve.
