Skillet Chicken Parmesan

Description

You will want to serve this awesome, light version of chicken parmesan cheese. Not only is it light, it's made in just one skillet and it can be on the table in a little over 30 minutes.

Ingredients

1/2 c. freshly grated Parmesan cheese, divided
1/3 c. dry breadcrumbs
1 t. dried oregano
1 t. dried basil
1/4 t. salt, divided
1 large egg white, lightly beaten
1 1/2 lb. chicken breast tenders
1 T. butter
1 T. olive oil
12 oz. angel hair pasta, cooked and drained
1 1/2 - 2 c. Classico Tomato Basil marinara sauce
1 T. balsamic vinegar
1/4 t. freshly ground black pepper
1/2 c. shredded Provolone or Mozzarella cheese

Preheat the oven broiler.

Combine 3 T. Parmesan cheese, breadcrumbs, oregano, basil and 1/8 t. salt in a shallow bowl. Place the beaten egg white in a separate shallow bowl.

Heat butter with olive oil in a large non-stick, oven-safe skillet, like a cast iron or stainless steel skillet, over medium heat. Dip each chicken piece in the egg white, then coat them in the breadcrumb mixture. Add the chicken to the skillet; cook 3 minutes on each side or until cooked through.

Place the cooked pasta in the oven-safe skillet. Place the cooked chicken on top of the pasta.

In a medium bowl, mix marinara sauce with balsamic, pepper and remaining 1/8 t. salt. Spoon sauce over the chicken; sprinkle evenly with the remaining Parmesan and Provolone cheeses.

Broil 2 - 4 minutes, or until the cheese is melted and bubbly.

Serve pasta with chicken and sauce on top immediately.
