Slow cooker meals are wonderful to make for working parents. Clean up is easy when you use a slow cooker liner. This chicken meal is one that your family will love. Serve it with a vegetable or a salad, if desired.
1 1/2 lb. chicken breasts
½ t. salt
¼ t. pepper
1 c. jarred pesto
1/2 - 3/4 c. chicken stock/broth
¼ c. salted butter, cut into slices
freshly squeezed juice of ½ lemon
3/4 lb. rotini cooked and drained
½ c. Parmesan cheese
2 c. shredded Mozzarella cheese
¼ t. dried basil, for garnish
Place a slow cooker liner in the base of a 6 qt. or larger slow cooker for easy clean up.
Add the chicken to the slow cooker; sprinkle on salt and pepper. Spread chicken with the pesto; pour in chicken stock/broth; squeeze lemon juice over the chicken. Place the butter over the chicken. Cover; cook on low for 5-6 hours without opening the lid during the entire cooking time.
Near the end of the cooking time, cook the pasta according to the package directions, about 8-12 minutes; drain.
When chicken is done, remove chicken to a platter; shred it with 2 forks. Add it back into the slow cooker; add the cooked pasta and Parmesan cheese; stir everything until the pasta is coated with the buttery pesto sauce and chicken is evenly dispersed throughout the pasta. Add the Mozzarella cheese over the pasta. Cover; cook about 15 more minutes or until the cheese has melted.
Serve, garnished with basil.
