Since so many people love tacos, use those flavors in this yummy, easy macaroni casserole. Your family will ask for this comforting and satisfying meal often, so just do yourself a favor and put it on your meal rotation.
2 lb. ground beef
16 oz. elbow macaroni
2 T. minced onions
1 T. minced garlic
2 cu. salsa
2 packets taco seasoning
8 oz. package cream cheese
1 c. sour cream
¾ c. water
favorite shredded cheese, for topping
salt and pepper, to taste
sliced green onions, additional sour cream and/or diced avocado for garnish, optional
Preheat oven to 375 degrees.
Bring a large pot of well salted water to a boil; cook pasta according to the package directions for al dente, about 6-8 minutes; drain; set aside.
In a large skillet, brown ground beef, garlic and onions over medium heat until thoroughly cooked. Discard excess grease. Mix in salsa and taco seasoning; simmer over medium heat about 5 minutes.
Add in cooked pasta, cream cheese, sour cream and water; continue stirring until cream cheese and sauce are well blended. Transfer to a casserole dish; top with shredded cheese.
Bake about 20-25 minutes or until cheese is bubbling.
Serve and season with salt and pepper, to taste. and top with optional garnishes.
