6 T. butter melted
2 T. Ranch dressing/seasoning packet
salt and pepper, to taste
4 medium sized chicken breasts, approximately 4 oz. each
1 lb. small red potatoes, halved or quartered
non-stick cooking spray
1 c. freshly shredded Cheddar cheese
4 slices bacon, cooked and crumbled
2 T. freshly chopped parsley
Preheat oven to 425 degrees or a grill over medium-high heat.
In a small bowl, whisk together butter, Ranch seasoning, salt and pepper, to taste.
Coat 4 large pieces of aluminum foil with non-stick cooking spray.
Place potatoes in a bowl; drizzle with 4 T. Ranch butter over the top; toss to coat evenly.
Place 1 chicken breast on each of the foil squares; season with salt and pepper, to taste. Divide the potatoes evenly among the 4 foil pieces, arranging them around the chicken; drizzle the remaining 2 T. butter over the chicken breasts. Fold the edges of the foil over the chicken and potatoes to make a packet.
Bake in oven for 45 minutes or on the grill for 30 minutes. Open the packets; sprinkle cheese over the chicken and potatoes. Leave the packets open; return to the oven/grill for 2-3 minutes or until cheese melts.
Sprinkle with bacon and parsley. Serve.
