Ingredients

Bechamel Sauce:
1/4 c. cultured butter
1/4 c. all-purpose flour
1 1/2 c. whole milk
salt and pepper, to taste
1/2 t. Dijon mustard
pinch of freshly ground nutmeg

Sandwiches:
10 slices of artisanal sandwich bread
8 oz. thinly sliced prosciutto
8 oz. shredded Mozzarella cheese
8 oz. freshly grated sharp Cheddar cheese
5 eggs

Bechamel Sauce:
Melt butter in a medium saucepan over medium heat. Whisk in flour; cook, stirring constantly until thoroughly incorporated. Slowly add milk, while whisking constantly until mixture is smooth. Cook, stirring often until sauce is thickened, about 5 minutes. Remove from heat. Season with salt and pepper, Dijon and nutmeg.

Sandwich Assembly:
Preheat oven to 425 degrees. Line a rimmed baking sheet with parchment paper.

On the baking sheet, spoon sauce up to the edges over each piece of bread. Top half of the bread slices with prosciutto and half of the cheeses; top with remaining bread slices; top those slices with remaining cheese.

Place in the oven; bake for 5-6 minutes, until cheese is melted and bubbly. Turn on the broiler; broil for 3 minutes or so, until the sandwich tops are golden.

Meanwhile, pan fry 5 eggs. Make sure the whites are thoroughly cooked and the yolks are runny. Season with salt and pepper.

Plate the sandwiches; top each sandwich with an egg.
