These pork chops are delicious, tender and easy to prepare. Let them marinate in the refrigerator overnight and cook them at dinner after a long day at work. They can be baked in the oven or could even be cooked on the grill.
6 pork chops
1/4 c. olive oil
2 T. grainy mustard, like Dijon Wholegrain mustard
1 T. dry or fresh rosemary, coarsely chopped
salt and pepper, to taste
Marinade:
Add all the ingredients except for the pork chops to a bowl; whisk until mixture begins to emulsify.
Place the pork chops in a casserole dish; pour marinade over pork chops, making sure you rub it all over the chops. Cover with plastic wrap; refrigerate 1 hour to overnight.
When ready to bake, preheat oven to 425 degrees.
Remove plastic wrap from casserole dish. Bake for about 45 minutes or until done.
Since all ovens are different, start checking on pork chops after 20 - 30 minutes to make sure they don't get overdone.
