These chicken strips will soon become one of your favorite chicken recipes. They are perfectly seasoned with Cajun flavored spices that is finger licking good. They can be an appetizer or the entree. Serve them plain or with your favorite mustard or honey
vegetable oil, for frying
1 c. panko breadcrumbs
2 T. Cajun seasoning store bought or homemade *see below
2 lb. chicken tenders, trimmed
1 c. buttermilk
Homemade Cajun Seasoning:
1/2 t. onion powder
1/2 t. garlic powder
1/2 t. dried oregano
1/2 t. dried basil
1/4 t. dried thyme
1/4 t. black pepper
1/4 t. white pepper
1/4 t. cayenne pepper
1½ t. paprika
1/2 t. salt
Cover the bottom of a large, heavy skillet with about ½ inch of oil; heat oil to 350 degrees.
In a small bowl that can be used for dredging or a small cake pan, combine panko breadcrumbs, onion powder, garlic powder, oregano, basil, thyme, peppers, paprika and salt.
Pour buttermilk into a small bowl.
Working 1 at a time, dip the chicken tenders into buttermilk and then into breadcrumbs, to coat. Place carefully into the hot oil. Cook the chicken in batches so that the skillet doesn't get too crowded. Cook for 2 - 3 minutes and then flip over, cooking for an additional 2 - 3 minutes. Chicken should have a golden brown exterior and should be cooked all the way through. Remove from skillet; drain on a paper towel lined plate.
Serve with your favorite mustard or honey, for dipping.
