Mediterranean Chicken

Description

Ingredients

2 t. olive oil
2 T. white wine
6 skinless, boneless chicken breast halves
3 cloves garlic, minced
1/2 c. diced onion
3 c. tomatoes, chopped
1/2 c. white wine
2 t. chopped fresh thyme
1 T. chopped fresh basil
1/2 c. Kalamata olives
1/8 - 1/4 c. chopped fresh parsley
salt and pepper, to taste

Heat oil and 2 T. white wine in a large skillet over medium heat; add chicken; saute 4 - 6 minutes each side, until golden. Remove chicken from skillet; set aside.

Saute garlic in pan drippings for 30 seconds; add onion; saute 3 minutes; add tomatoes; bring to a boil. Lower heat; add 1/2 c. white wine; simmer for 10 minutes. Add thyme and basil; simmer for 5 minutes.

Return chicken to skillet; cover; cook over low heat until chicken is cooked through and no longer pink inside. Add olives and parsley to the skillet; cook for 1 minute.

Season with salt and pepper, to taste. Serve.
