Use ingredients that you may already have to prepare a simple Greek marinade to make a wonderful, grilled chicken. You can serve the chicken as the entree or in pita bread for sandwiches or in a pasta salad.
4 chicken breasts
1/4 c. olive oil
1/4 c. freshly squeezed lemon juice
1 T. garlic finely chopped or paste
1 t. ginger finely chopped or paste
1 T. oregano
1 t. rosemary
1 t. thyme
1 t. parsley
1/2 t. paprika or red chili flakes, or to taste
1 t. salt
1/2 t. pepper
freshly chopped basil, for garnish
In a large mixing bowl, mix together olive oil, lemon juice, garlic, ginger, herbs, paprika, salt and pepper.
Add chicken breasts; make sure chicken is fully coated in the marinade. Cover; marinate in refrigerator for at least 1 hour to no more than 8 hours.
When ready to grill, preheat grill.
Remove chicken breasts from marinade; place on hot grill; grill each side for 6-7 minutes or until chicken is fully cooked throughout. While grilling, baste chicken with leftover marinade several times.
Remove chicken breasts from grill; place on a serving platter; let chicken rest for 5 minutes.
Serve, garnished with chopped fresh basil.
