Ingredients

  • 1½ lb. stew meat
  • 19 oz. can red enchilada sauce plus more for later (or reserve some)
  • 2 beef bullion cubes, crushed
  • canned refried beans, warmed
  • 5-7 burrito size flour tortillas
  • 1 c. shredded Cheddar cheese or more, to taste

Steps

  1. Put stew meat into crock pot; top with crushed bouillon cubes and enchilada sauce; cook on Low for 7-8 hours, or until meat is very tender. (or on High for 3-4 hours)
  2. When beef is done, very tender and flakes off when stirred, taste; add more salt, if desired.
  3. Warm beans.
