Make a one pan dinner that's easy and quick to make. It's a seriously flavorful dinner that you will make often. Instead of green beans, use asparagus or carrots, for a change.
4 (8-oz.) pork chops, bone-in, 3/4 inch - 1 inch thick
16 oz. baby red potatoes, cut into bite-size pieces
16 oz. green beans, trimmed (if thick, blanch first)
2 T. olive oil
1 oz. packet dry Ranch seasoning and salad dressing mix
3 cloves garlic, minced
Kosher salt, to taste
freshly ground black pepper, to taste
2 T. chopped fresh parsley
Preheat oven to 400 degrees. Lightly oil an 11x17 baking sheet or coat with non-stick spray.
Place pork chops, potatoes and green beans in a single layer onto the prepared baking sheet. Drizzle with olive oil; sprinkle with Ranch seasoning and garlic; season with salt and pepper, to taste.
Place into oven; roast until pork is completely cooked through, reaching an internal temperature of 140 degrees, about 30 minutes., turning chops over after 15 minutes. Cooking time will vary depending on the size and thickness of the pork chops and potatoes.
Then broil for 2-3 minutes, or until caramelized and slightly charred.
Serve immediately, garnished with parsley, if desired.
